WHere is an easy version of a beverage featured on a new drinks list. It's a party-sized prepared mix which is bursting with the flavours of the festive period, rendering it perfect for a holiday party. Any leftover citrus syrup to use in morning drinks, puddings, or to make more rounds of the drink.

Makes enough for 10 servings
Ingredients for the Clementine Cordial (produces 750ml)
300ml fresh clementine juice
200ml fresh lemon juice
500g granulated sugar
To make the Premix (yields 850ml, serving 10)
400ml decent vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml clementine syrup (as made above)
A few cranberries, as a garnish
Mandarin essential oil, to finish
Instructions
For the Cordial: Combine every ingredients inside a pan, bring to a light boil, agitating to dissolve. Then, take off the stove allowing it to reach room temperature completely. Decant into a sealable bottle, cap it and refrigerate it chilled, it can be stored for about one month.
To make Batch Mix: Mix all the spirits and syrup into a sizeable container, let it rest for one hour, then strain , ideally through cheesecloth, so it's fully clarified.
When ready to serve: Pour 85ml of your cocktail base into a cocktail shaker packed with ice, and stir carefully for one minute to chill. Filter to a cold coupe glass or a similar vessel, top with a few cranberries and finish with a brief mist of mandarin oil over the top.
